If you want to do an Anchor Steam and can't get Northern Brewer hops look for Perle. They are related to NB and have a similar if somewhat softer flavor. Although Anchor Brewing has copyrighted the term "Steam Beer" there were other breweries in the San Francisco area brewing beers in that general style over the last 150 years.

Compared, side by side, a true Anchor Steam (in a can, purchased commercially) vs my own homebrewed Anchor Steam. Immediately, without telling others, I detect oxygenation in the can of Anchor Steam. I can even smell the "cardboard, wet paper" when I sniff the true Anchor Steam in the glass.

While I agree with Teacher, I will say that Anchor Steam is *the* reference beer for California Common for BJCP judging. So, if you are planning to submit to a competition, even though you could in theory use any lager strain or hops, you are better off using San Francisco Lager and Northern Brewer Hops because that's what is in every judge's ...

Anchor Steam Clone - Not "Fruity" like Anchor Steam
Yooper's recipe (California Common - California Common (Anchor Steam Clone) Extract and AG) suggests 55 F, clearly on the colder side. I may take out the Victory as well, I generally like it but I think in this beer I'm getting a rye flavor of sorts, which I don't care for, and that might be countering any fruitiness that's there.

I just brewed an Anchor Steam clone (extract w/grain). The recipe says to ferment for 75 to 90 days at 55 to 60 degrees. What will happen if I ferment at 68 to 70 degrees with my other ales I will be brewing in the next 3 months??

Tastes like maybe 28-32 IBU, I don't get a lot of hop flavor, but I'm not particularly sensitive. It feels like it finished sweet - maybe a Scottish yeast would get the malt forward profile? There's probably some supporting yeast flavors under that sweet richness. Know that it is Anchor steam, a warm ferment on 2112 might get you there.
